Slow Cooker Chicken Curry

Is it just me or does everyone wake up suddenly one morning craving Indian food?

In case this does happen to you and you’re looking for mostly a click and go version of Chicken Curry, here is a good way to satisfy the craving. There are a lot of ingredients but the prep is relatively simple, about 30 minutes. 4 hours in the slow cooker, some naan or rice and you’re good to go. Also, the portions you freeze will make future Indian cravings a breeze to extinguish.

Sauce

  • 1 Red Onion, chopped
  • 1-3 Cayenne Peppers, chopped
  • 2 T Ginger, chopped
  • 6 Cloves Garlic, chopped
  • 28 oz Chopped Tomato (in sauce)
  • 4 T Tomato Paste
  • 2 T Sweet Curry
  • 1 T Garam Masala
  • 1 T Cumin
  • 3 T Red Wine Vinegar
  • 2 T Flour
  • 1 t Salt
  • 1 t Ground Black Pepper
  • 2 T Olive Oil
  • 2 T Butter

Meats

  • 1 lb Chicken Thighs
  • 1 lb Turkey Tenderloins
  • 1 t Cumin
  • 1 t Sweet Curry
  • 1 t Salt
  • 1 t Ground Black Pepper

Really any meats you like will do or paneer or you just just go veg and omit the lot.

Other

  • 8 Ounce Spinach
  • 1 lb Baby Potatoes
  • 1/2 C Cilantro

Sauce: Heat oil and butter in large saucepan over medium high heat. Add onions and saute until golden, about 5-7 minutes. Add garlic, saute a minute. Add ginger, saute a minute. Add cayenne pepper, you know the drill. Next add everything else and stir until blended. Reduce to low and simmer for about 5-10 minutes, stirring once or twice. Remove from heat. After the sauce cools you can run it through a food processor if you want a smoother consistency. If you like chunky, just leave it alone.

Meats: Mix the salt, pepper,cumin and curry together then rub into the meats. Wrap the rubbed meat in plastic wrap then refrigerate for 30 minutes or longer.

Assembly : Place the potatoes in the bottom of the slow cooker, unwrap meat and layer on top. Spoon sauce over that. Set cooker on high for about 4 hours. Go do other stuff. Come back and add the spinach and cilantro, stir it up then let simmer for another 15 minutes or until the spinach is incorporated.

This will make about 8-10 servings unless you’re doing a 2am sober up thing, then it might be less.
